If any of you have ever heard of the food blog, Running On Veggies, then you’re going to be excited about this post. Lottie Bildirici is the creator and mastermind behind all the delicious, plant-based recipes on the site, which I came across in 2015. Thank God I did because her desserts are amazing and actually kept Ashton and I sane during hard training phases, or the times of the year when we were really careful about what we were eating. Her recipes are mostly plant-based, sometimes including fish or eggs, and her desserts are always date sweetened and in my opinion, guilt-free.
Lottie lives in Brooklyn, New York and besides nutrition, she has a passion for running, fitness, and just living a healthy lifestyle in general. She’s competed in 9 half marathons, several triathlons, and a half Ironman. If she’s not doing one of those insane things, she’s trying new, fun and challenging fitness classes in NYC.
I thought it would be cool to have Lottie share with you a day in the life of what workouts she’s doing and what she’s eating to fuel herself correctly. If you have any questions for her after reading this post, please leave them in the comments section below and I will get the answers for you.
Everyone, meet Lottie!
Being that I am a freelancer, food blogger and triathlete, no day in my life looks the same as another. This is one of my favorite aspects of my job – it’s always exciting and different. But I am also big on structure/routine and knowing what my day/week will look like. Having an agenda and goal each day is key for me because it allows me to focus on what needs to get done. It’s no surprise then that I am an early riser. I usually set an alarm, but most days I am up just a few minutes before it rings. My family has a home in New Jersey for the summer so I like to spend as much time as I can out there. It’s a great escape from the city, where I spend most of my year when I’m not traveling to training camps. Below is a snapshot of a day in the life of me:
The alarm goes off, the bags are packed, and I’m almost ready to set off for the Hump Day Tri. This is an unofficial triathlon/workout I try to get to every Wednesday. We swim 1 mile in the ocean, bike 21 miles and run 3. It’s a great workout and great practice for actual race day as I train for my second Half Ironman this September in Lake Placid. I love good coffee so after downing a glass of water or two I make an Americano while I get ready to head out. I am not usually hungry this early in the morning but I make sure to eat something because I know it will be a long morning. 1 piece of toast with nut butter and some blueberries and I’m out the door.
Arrive at Hump Day where I struggle to put on my wetsuit (who doesn’t?!). We swim 1 mile and even spot a dolphin. A quick rinse and we are off on the bike. Last summer I had such a hard time trying to stay with the group on the bike and would get dropped by the middle of the ride. After putting in the work this year I find myself still struggling but hanging on to the pack for the whole ride. I have two bikes – one is a TT bike Cannondale Slice and one is a road bike Cannondale Evo. I am not running today because I will run tomorrow and with my long history of running injuries, my coach doesn’t like me running two days in a row. I have been working with my coach — Coach Cane – since my freshman year of college. He knows me like a book and gives me that “tough love” that tells me how it is.
I’m back home and HUNGRY! If I’m eating before a workout I usually opt for my overnight oats recipe. But if I’m eating after, I look to get in some protein and carbohydrates. Today I’m having Ezekiel toast with eggs and avocado – simple but always delicious. While I’m eating I check emails and try to empty out my inbox.
Today I have an interview with Bicycling Magazine. They are asking me questions about runners who ride, riders who run. I have always had a hard time finding that balance of riding and running. I recently fell in love with cycling and now, I find whenever I run my legs are so tired from riding the day before. But when my legs are not tired from riding I’ve found that they’ve gotten so much stronger. So it’s all about finding that happy medium. I even shared with them one of my favorite on-the-go bike snacks.
Lunch time! Today I’m eating lunch at home. I’m a big believer in using left overs because it feels like someone cooked for you! I steamed some kale added brown rice, beans cooked in tomato sauce, avocado and tomatoes.
After eating lunch and answering more emails. I get to work on a recipe I have been working on…I edit photos, write the post and send it to my editor for a second look. These peanut butter cookies are so addicting!
Yoga time! I am really bad at doing yoga during the winter. It’s always a bonus workout for me so I need to have the time and energy to do it. In the summer, I find I have both more time and more energy. There is a great studio just a 5 minute bike ride from my house so I always make an effort to get there a few times a week. It is hot yoga which is great for me because I have no flexibility. It allows me to really loosen up!
After yoga, I rush home because I invited my friends over for dinner. I have been friends with this group of girls since we were in kindergarten and it’s so special when we get together now as adults. I love cooking for them, catching up on what’s going on in their lives and – bonus! – I get to test recipe ideas on them. Tonight I am making salmon on the BBQ, chickpeas and farro.
We watch some bad reality TV, my not-so-guilty pleasure (I pretty much watch every reality show on Bravo). Before heading to bed around 10:00, I prep overnight oats for the morning so I have it ready for my run and then I go over the workout I have planned for tomorrow, which is a cadence focused run. My coach has me working on running at a higher cadence to avoid injury. I even run to a metronome to try and get that rhythm and run at 180.
Without enough sleep, I simply would not be able to be as active as I am. My friend doesn’t get her recommended hours of sleep each night, and as a result, she isn’t as active as me. And it shows. I recently read an article online about how sex can help us to sleep thanks to the hormones that are released during the act. So, obviously, I recommended that to her straight away and she enjoyed hearing that! She doesn’t currently have a partner, but there are many toys she could use which could offer an exciting diversion to the hours she spends laying restless in bed. Having said that, she has just started to read these Medterra reviews to see what kind of CBD oil will be able to help her have a good quality of sleep, so hopefully that might change for her soon. You can read about the review here if you’re also interested. For a while I struggled to sleep, many years ago, and it wasn’t nice. I would get super run down and feel lousy, so during the week I do my best to get to bed early! I know how important sleep is and how many people don’t get the recommended hours of sleep each night. I used to really struggle with sleeping and I had poor sleeping habits. I would get into bed late, sit on my phone for a while and then lay uncomfortably for hours. I decided to change my routine a few months ago and the first thing I did was buy the best mattress for side sleepers. Ever since then I have found it so much easier to sleep on my side in comfort. I know get early nights whenever I can and stay off my phone for at least an hour before bed. It’s worked wonders.
So that’s what a typical Thursday looks like for me 🙂
