It’s the ground up, dried, inner white flesh of the coconut. It has a coconut scent and is sweet in taste.

Two main reasons:

  1. Gluten-free – those with celiac disease and gluten sensitivities can eat it.
  2. It’s a seed – those with nut allergies can tolerate it.

It’s really high in fiber, having almost double the amount found in wheat bran, and is known to help regulate blood sugar due to its low glycemic index.

How do I use coconut flour?

It can be partly substituted for all-purpose flour in baking. It does soak up a lot of water, so you need to add more liquid to accommodate.

What kind of coconut flour should I buy?

I always buy Nutiva Organic Coconut Flour, 3 Pound, a brand that has the only ingredient being ‘coconut flour’.
